The Role

We are seeking a dynamic and experienced Sous Chef who loves a challenge and thrives on hard work to oversee the kitchens at our site based at the Werribee Open Range Zoo. The successful applicant will be available on a part time basis, working between 30-35 hours per week.

Key Duties

  • Plan, supervise, monitor, and evaluate the food production
  • Deliver to our client's high expectation of a premium experience
  • Controlling stock, preparing budgets, operating within strict budgetary constraints, mentoring and training
  • Maintaining a high standard of food hygiene, safety, infection control and cleanliness in accordance with Compass standards.
  • Supervision and training of kitchen staff including kitchen hands, cooks and chefs

The Person

  • Chef trade certificate
  • Drive, personality creative flair and a passion for food
  • Experience in leading, mentoring and developing teams
  • Experience catering for Large and small scale events and retail
  • Exceptional communication skills
  • Must have experience in menu development and costing
  • Training and/or accreditation in OH&S and Food Hygiene
  • Availability to work nights and weekends according to business demands
