The Role
We have a great opportunity for an enthusiastic and passionate Sous Chef to join our Banquets Pastry Team!
You will assist the Chef de Cuisine to ensure the smooth running of our busy Pastry kitchen, which produces a diverse range of a la carte desserts for our Restaurants as well as fulfilling our role in the banqueting operation. You will have substantial influence on the outlets financials whilst ensuring culinary standards are maintained. Through your leadership and guidance you will coach the team to ensure the desserts and pastries offering are of the highest standard.

Your Experience

• Extensive experience as a qualified Pastry Sous Chef in a similar hotel or casino operation
• Demonstrated ability to lead and motivate a team of kitchen professionals
• Organisational ability including time management, task prioritisation and resource scheduling
• Strict compliance towards Food Safety and HACCP
• An ability to adhere to recipes and procedures as outlined by the Chef de Cuisine and Executive Chef
• Ideas and suggestions for menus and recipes where appropriate
• Flexible with working hours based on the business demand
• Australian Trade Certificate in Commercial Cookery or equivalent
