Wheatland Hotels is seeking to recruit a professional restaurant manager with proven ability and experience leading a team of wait staff and chefs. This is a full time position working night shifts with a finish time of 1am on average.

Wheatland Hotels is seeking to recruit a professional restaurant manager with proven ability and experience leading a team of wait staff and chefs. This is a full time position working night shifts with a finish time of 1am on average.

The ideal candidate will have worked at similar venues and have a minimum of 2 years experience creating and managing staff rosters as well as adhering to weekly budgets and keeping cost percentages in line with company expectations. This position requires cellar management experience and an in-depth knowledge of wine in addition to table waiting and bar-tending skills.

Duties and responsibilities:

Manage daily operations of the restaurant to ensure seamless service

Create a professional working environment with the kitchen at all times

Formulate SOP’s and implement systems and policies to achieve operational efficiencies

Ability to open/close tables, prepare bills, process payments, move tables, split tables, maintain and build customer database

Handling customer complaints in an efficient and professional manner,

Receive feedback from customers and communicate to the team, including quality and service issues

Update menus, wine & cocktail lists

Ensure dining facilities comply with health regulations and are clean, functional and of suitable appearance

Maintain and monitor all relevant food safety and OH&S standards

Recruit and train new staff

Organise and plan special events and functions,

Plan and cost menus with the Head Chef and Director

Maintain records of stock, put stock rotation procedure in place, and conduct regular stock-takes

Co-ordinate all bookings over the phone online and in person

Greet customers, promote in house specials and promotions

Communicate guests dietary requirements

Evict troublesome patrons and apply responsible service of alcohol

Any other duties as specified by the Director

The ideal candidate will also have complete cellar management including knowledge of beer dispense systems, changing kegs, cleaning beer lines, and maintenance of post mix dispense system
