Tonka is looking for an experienced and enthusiastic Restaurant Manager to lead our front of house team.

Tonka is a modern Indian Restaurant located down one of Melbourne’s iconic laneways, Duckboard Place. Since opening in 2013, Tonka has been awarded the Age Good Food Guide’s Hat Award every year.

We are open 7 days a week for both lunch and dinner.

This is an opportunity to work in one of Melbourne’s leading restaurants alongside a dedicated and experienced team of professionals and learn about the iconic cuisine served by Executive Chef Adam D’Sylva.

The Restaurant Manager will be responsible for the following duties:

• Maintaining restaurant presentation, cleanliness and maintenance
• Maintaining efficient operating procedures in managing cost of goods and wages
• Experience meeting financial objectives and management of back of house procedures such as financial analysis and staff rostering
• Stock ordering
• Implementing training programs, company policies and standard operating procedures
• Engaging with customers and handling feedback.

Additional tasks and projects as required by the Restaurant Manager

For this position it is expected that you would possess the following qualifications/work experience:

• Have supervisory / management experience, minimum 3 years
• Lead by example; drive your staff to increase sales by creating authentic, fun customer experience
• The ability to thrive in a fast-paced environment
• An understanding of Indian cuisine
• Understand and exposure to the essential functions of business management (rostering, wages, ordering, stock management, customer service.)
• Ensuring compliance with all relevant legal statutes, including but not limited to OH&S, liquor licensing and city council requirements.
• You will be required to have a strong presence on the floor, be hands-on and be a shining example to your staff to drive customer service.
• Flexible availability across a 7 day a week operation
• A strong knowledge of wine
