Job Details

Longsong is looking for a Restaurant manager, we opened in November 2017 - a collaboration between John & Lisa van Haandel and David Moyle, of Franklin in Tasmania. A great bar and dining room, Longsong is located above it's big brother restaurant Longrain, on Melbourne's Little Bourke Street and is one of Melbourne's most distinctive and special spaces.

The menu is composed of wood grilled, barbequed proteins and vegetables, matching an eclectic drinks list – which represents a score of different primary producers, brewers, mixers and makers.

Your role as Restaurant manager at Longsong is to help support, guide and build a strong team. The manager is responsible for supporting all areas of the venue in all aspect of running the day to day operations successfully. You are responsible for helping with training, managing and overseeing staff to ensure customers receive the highest level of service possible.

For the position we expect you to have solid experience and knowledge in restaurant services within a bar setting in order to perform the tasks associated with the position which include:

  • Being an outstanding mentor and leader, committed to personal development of all staff on the Longsong team.
  • Leading by example and setting the service standard for the team.
  • Overseeing the daily opening & closing procedures.
  • Working with the kitchen to ensure that menu items and specials maintain the focus of the Longsong ethos; focus on provenance, tracebility & seasonality.
  • During service monitor meal times especially during weekends and busy periods. Keeping up a constant dialogue with the Longsong kitchen and bar.
  • Handling/resolving customer complaints.
  • Working with the Head Chef to ensure all staff have execellent knowledge of the food offering at Longsong.
  • Working with the kitchen to ensure monthly sales targets and purchasing budgets are met.
  • Helping to ensure that the kitchen are maintaining and updating stocktakes, weekly and monthly, accurately.
  • Working with the Bar Manager to ensure that all staff have excellent knowledge of menu offering.
  • Planning and organising special functions and events
  • Planning menus for functions and events in consultation with the Head Chef
  • Promoting positive inter-department relations with the bar, the kitchen, the office and other managers.
  • Recruiting, training and supervising waiting staff and preparing staff rosters
  • Participating in management meetings
