So, what are we looking for?

We are in search of a professional Resort Head Chef to join our diverse team of Tourism and Hospitality lovers… do you think you have what it takes?

A few essentials about you…

  • Have a professional outlook in the workplace and show an invested interest in the hustle and bustle of the Hospitality industry
  • Management of your Kitchen team, including daily procedures, reporting to the Group Executive Chef on daily operational procedures
  • Leadership of all aspects of the departments operation to ensure that guest expectations are met in accordance with brand standards and procedures
  • Planning and development menus for the hotel, considering factors such as product availability, service cost, marketing conditions, number to be served and appropriate food portions with respect to the hotel's pricing policy
  • Daily analysis of and responding to guest feedback, guest satisfaction and associate satisfaction information; and ability to provide positive commitment to continuous improvement of product and performance in line with company standards
  • Demonstrate clear behaviours and management style that align with our corporate culture
  • Prepare and present kitchen work schedules to reflect operating forecasts and to adhere to budgets
  • Maintain workplace health and safety procedures, manual handling, chemical handling and other company policies and procedures
  • Responsible for the hygienic and safe preparation of food within all food and beverage outlets
  • Responsible for effective training and development, certification, performance evaluation, turnover reduction and optimisation of productivity through efficient work practices and staff rostering
  • Proven staff management, providing ongoing support and training to your team, and ability to conduct monthly team member appraisal reports to Management where required
  • Demonstrate people management skills and an understanding of cultural diversity within the workplace
  • Take pride in your customer service abilities to ensure our guests’ experience on island is one to remember! Offering guests a professional level of service in a relaxed and friendly environment

A few simple role requirements…

  • Relevant trade qualifications
  • Immaculate grooming and presentation
  • Exceptional time management skills
  • Extraordinarily high level of customer service and work ethic
  • Demonstrated industry experience within a large Hotel / Restaurant or Resort based environment
  • Proven ability to lead, train and develop a culturally diverse team
  • Proven experience across fine dining, a la carte, buffet, bar and events service styles
  • Proven experience in meeting cost of goods sold and labour budgets – ability to meet and exceed department KPI’s
  • A valid Police Clearance (within 6 months or less), or the ability to obtain one for work
  • The ability to relocate into the Staff Village on Fraser Island for work
  • The ability to work across a broad rostering system, over a 7 day working week
  • The ability to visit the island to meet with Management, should your application be shortlisted

This involves moving into the Staff Village, located within a 10 minute walk of the Resort and Barge, and sharing the Village facilities with between 80-100 like-minded team members.
