The Sofitel Melbourne Pastry Kitchen is seeking a Pastry Chef to join their creative team. Operating under the guidance of our Pastry Sous Chef, this role is 'behind the scenes' and is hands on preparing and producing all pastry mise en place items for the multiple outlets including the Banquets, Sofi's Lounge, Atrium Bar and In-Room Dining Kitchens.

KEY RESPONSIBILITIES

• Support and collaborate with multiple kitchens to produce indulgent high teas in Sofi's Lounge, lavish dessert buffets in Conference and Catering and the premier pastry section in award winning restaurant No35
• Assist the Pastry team in demonstrating flair to brainstorm and create new items
• Ability to interpret event orders and deliver based on the clients needs
• Actively promote and participate in teamwork and positive communication with the kitchen and other departments
• Ensure food standards, preparation, presentation and cooking techniques are established and monitored to meet Sofitel Brand Standards guidelines
• Ensure highest level of hygiene is practised to meet Health & Safety regulations and HACCP food preparation guidelines
• Ensuring food safety logs and requirements are met at all times

SKILLS AND ATTRIBUTES

• Trade qualified and you will have a minimum of 6 years' pastry experience
• Experience producing and garnishing desserts to a high standard
• Experienced in high volume catering or hotel background
• Ability to maintain portion control, production, planning and garnishing of pastry items
• As with the hospitality industry you will be available to work various rostered shifts
