What are we looking for?

We are seeking a current Sous Chef who is looking at taking the next step in their career or Current Head Chef who is after a change in scenery with a fantastic work life balance.

The role of a Head Chef covers the aspects of operations within the kitchen environment. It requires a strong work ethic, team focused attitude, leadership qualities as well as the ability to follow directions from senior management where applicable.

Successful applicant will need to show:

  • a proven track record of calmness under pressure
  • a proven ability to multitask and meet deadlines
  • an all encompassing passion for food, a true hospitality professional

ideally you will already posses base knowledge of the following

  • Menu writing, costing and implementation
  • training techniques for educating staff
  • HACCP and food safety standards

Member/Customer Service.

  • Serve a consistent high quality product
  • Ensure that the kitchen is always in a clean and hygienic state
  • Perform the operational duties of allocated section.
  • Maintain the equipment and utensils.

Teamwork

  • Maintain a commitment to workplace objectives by supporting peers and management in the day-to-day operations.
  • Contribute to team meetings and support and recommend changes to improve business and operating efficiencies

Delivery

  • Maintain knowledge of, and deliver products and services to members and customers that are compliant with standard operating procedures.
  • This includes an awareness of overall RSL and local business activities that provide opportunities for increased member/guest usage and revenue growth of our facilities.

Knowledge:

  • Knowledge of all food items and base cooking techniques
  • Knowledge of the major Kitchen sections with exposure to sauces, Larder, Grill, Pans and Pastry and associated service styles.
  • Knowledge in the procedures and implementation of mis en place of the assigned section.
  • Strong grasp of stock rotation.

Skills:

  • Great communication skills.
  • Very good food preparation skills for the assigned section of the kitchen such as grill, larder, buffet, and functions / banquets.
  • Time management skills with the ability to co-ordinate multiple tasks within tight deadlines.
  • Promote morale and encourage teamwork.
