JOB SUMMARY

The job of a Head Chef covers the aspects of operations within the kitchen environment. It requires a strong work ethic, team focused attitude, leadership qualities as well as the ability to follow directions from Head Office where applicable.

REPORTING RELATIONSHIPS

On all management related matters you will report to the Venue Manager.

All apprentices and kitchen hands will report to the most senior kitchen staff member working at the time. Which will be the Chef in the absence of the Head Chef or Sous Chef.

DUTIES & ESSENTIAL JOB FUNCTIONS

To ensure that all meals are cooked in a manner which adheres to the venues recipe & plating guides as well as ensuring all meals are served in a timely manner and are of the highest possible quality.

Ensuring staff are allocated sections and secondary duties throughout their shifts, as well as managing general kitchen operations in conjunction with the sous chef.

To maintain a safe and hygienic kitchen, that adheres to all food preparation and cleanliness guidelines. Also ensuring staff are following the kitchen cleaning systems

Helping to improve current menu items and to develop specials and LTO's (limited time offers)

Stock ordering, Delivery receipts, temperature logs etc.

QUALIFICATIONS

  • Fully Trade Qualified
  • Cert 3 in Commercial Cookery
  • Level 2 First Aid Certification

REQUIRED KNOWLEDGE AND ABILITIES

  • Ability to cook a broad range of food items.
  • Experience with kitchen operations and functions.
  • Ability to work as part of a team.
  • Ability to work in a high stress environment.
  • Ability to follow and give direction when required.
