As we continue to build our world-class restaurant chain, an exciting opportunity has become available for a Head Chef /Menu Development Manager. The successful candidate will be based in our head office located in Abbotsford. The role requires two days in the kitchen and 3 days in our office developing our menus.
You will be responsible for:
- Manage the operations of our commercial kitchen
- Preparing wok based meals 2 days a week
- Work closely with the Supply Chain Manager and Marketing Team in the development of menu items
- Ensure the franchised network are using approved products only and following our systems
- Recruit and train chefs for our franchised businesses
- Build strong relationships with our Franchise community, guests and internal stakeholders.
- Recruit, train, develop and motivates chefs and kitchen crews to run the kitchen operation
- Ensure the team meet established food preparation standard/SOP’s and adhere to company policy/procedures
- Ensure that food stock levels for the running of the kitchen operation is of sufficient quantity in relevance to usage forecasts including waste management
- Manage staff rosters and ensure the kitchen budget is strictly adhered too
- Ensure that all food preparation equipment is being used safety and correctly and that it is cleaned and maintained
- To work in close conjunction with the Supply Manager and Marketing team, to create and develop new menu options within set parameters
- Ensure all cooking manuals/SOPs are created, documented and updated as required by the business
- Ensure all new products development are thoroughly tested and operationally sound for release to our franchised network
- Conduct products compliance review to ensure our franchise network are using only approved products specified by us
- Keep up to date with the latest food trends
- Assist with the recruitment and training of new cook into our franchised systems
- Assist with ad-hoc projects as required by the business
Skills and Experience:
- Wok skill desirable
- Experience in Asian/Western Cuisine
- Current Cert IV in Training and Assessment desirable
- Food Safety Supervisor Certification desirable
- Proven experience Training small groups and 1:1 coaching
- Experience in managing a team
- Good command of English
- Attention to detail
- Ability to solve problems and think-on-your-feet
- Willingness to take initiative and make decisions
