About the business and the role
We are a small restaurant in Gertrude Street, Fitzroy. 70 cover over 2 floors.
We feature an open kitchen where people can seats around and talk to our chefs.
We are looking for an Head Chef with strong knowledge of Italian food & homemade pasta.
We run with a small team and we need a leader with strong communication skills.

Job tasks and responsibilities
- Overall responsibility for the kitchen's daily operations.
- Liaising with the relevant companies/suppliers for food orders, look always for seasonal food, & best deals
- Creating new dishes and specials and ensure that all menus are correctly calculated to ensure maximum gross profit.
- Maintaining/raising the food's profit margins for your employer.
- Monitoring and controlling stock levels.
- Report and ensure everyone reports any wastage
- Ensuring correct stock rotation procedures are followed.
- Implementation of health and safety procedures in the kitchen.
- Estimating costs and ensuring all purchases come within budget.
- Work closely with Director on weekly kitchen roster to keep labour cost on budget
- Ensure that all staff are constantly trained to effect good portion control and pleasing presentation of dishes.
- Ensure that sufficient stocks of all materials are being kept and stored under the correct conditions.
- Liaise with management daily regarding special requirements, VIP's functions, etc.
- Ensure that all statutory hygiene requirements are diligently followed.
- Ensure that maintenance problems are promptly reported.
- Ensure that attendance registers are kept daily and that any absenteeism or lateness is reported to management without delay.
- Ensure that all documents and invoices are passed to management immediately for processing.
- Ensure that all staff are dressed correctly to satisfy statutory requirements as well as enhancing the image of the establishment.
- Helping with interviewing and hiring new staff.
- Constantly update your knowledge and skills for the good of the establishment.
- Ensure that regular monthly stock-takes are done by last trading day of each month.
