We are a busy CBD Cafe looking for an experienced Chef to take the helm in our kitchen and push the boundaries of contemporary flavoursome CBD Cafe food.

We are located in the heart of the CBD near Martin Place and enjoy a reputation for delivering flavoursome, contemporary food that goes beyond the average food-hall & lobby café offering.

In this role you will have the responsibility of running the entire kitchen and producing a broad range of take-away and dine-in breakfast and lunch dishes from a well structured and efficiently planned menu.

We are looking for an experienced chef with a proven track record working in cafes and an understanding of how to balance creative flair with practical, sensible execution to achieve commercial success.

This is a Full-time Monday to Friday position with wage negotiable based on experience.

Hours: Monday to Friday 6am - 3.30pm

Responsibilities and Duties

You will be expected to:

  • Lead the kitchen for preparation and service of take-away and dine-on breakfast and Lunch service.
  • Plan, manage and deliver all areas of food production
  • Plan weekly and seasonal menus.
  • Manage all catering orders including scheduling, planning, resourcing, production and presentation.
  • Manage, train and recruit all kitchen staff including rostering, training, recruitment and performance reviews.
  • Place daily orders for all materials from suppliers (dry goods, fruit and veg, meats etc…..) and manage inventory for the kitchen ensuring appropriate stock control.
  • Effectively operate the kitchen in a manner that maximises output efficiency from the resources and materials available.
  • Supervise Food Health and Safety processes including keeping the kitchen clean and tidy and in compliance with food health and safety regulations.
  • Document and maintain product costings for every dish on the menu and portion control to ensure product costings are consistently maintained.
  • Document all recipes and kitchen policies and processes.
  • Consistently come up with fresh creative dishes for our weekly specials, salads and soups
  • Supervise and manage our baker ensuring the quality and consistency of baked goods.

Qualifications and Skills

To be considered for this role you must have the following:

  • Qualifications: Commercial cooking and Food Safety supervisor
  • Positive attitude and be easy to work with
  • A true passion for cooking great food
  • Minimum 2 years experience as lead cook in a cafe kitchen cooking a broad range of dishes
  • Ability to work under pressure and at pace through busy breakfast and lunch service periods
  • Excellent organisational skills, a flexible attitude and be well presented
  • Proven ability to follow recipes and adjust to taste when required as well as write recipes that meet the profile of the business
  • Excellent communication skills including and a proven ability to nurture and train team members from the bottom up.
  • Proven experience to work independently and consistently
  • Be punctual and totally reliable
  • Experience managing a kitchen team of at least 3 people and being an effective delegatory
  • Full time working rights
  • Availability to work Monday to Friday 6:00am - 3:30pm and sometimes longer when required.
