The Athenaeum Club, one of Melbourne's most prestigious establishments, is seeking a full time qualified Chef de Partie who is looking to continue his/her learning and development.

The Chef de Partie will work with a team of chefs, supervising and mentoring junior chefs, and be responsible for delivering a consistently high quality food product for lunch and dinner in the Club's Main Dining Room, Athena Restaurant, Basement Grill and various functions.

Working to a fair roster this role does not require you to work many weekends as the majority of shifts are Monday - Friday, with some regular split shifts.

The successful candidate will:

  • Be a true hospitality professional, trade qualified and dedicated to providing culinary excellence and service
  • Be driven and focused with a desire to learn and succeed in a culinary career
  • Display excellent communication skills and be a team player
  • Be familiar with European and Australian cuisine
  • Be exceptionally well presented and groomed

Key responsibilities in the role include

  • Assisting the Executive Chef and Sous Chef in the development and maintenance of cuisine concepts, standards from food preparation, presentation and service where appropriate
  • Establishing and maintaining standard recipes, including photographic presentation of menu items
  • Directing, coaching and supervising apprentice chefs, Commis chefs, casual chefs and kitchen stewards
  • Maintaining efficient OH&S standards to a Food Safety Program with the knowledge and ability to maintain a safe and hygienic working environment
  • Managing a section unsupervised
