Arts Centre Melbourne is currently seeking a motivated and passionate Chef de Partie to join the kitchen brigade. This position will suit an a la carte commis or demi chef who is eager to further their knowledge and experience.

Our culinary team has designed a range of spectacular menus that, like the best performing arts experience will heighten your senses. Across our exciting mix of dining experiences you will find menus created with a passion for flavour, freshness and using the finest local seasonal produce.

We have a number of key Food and Beverage outlets which cater to the millions of visitors Arts Centre Melbourne attracts annually. These include; Barre, Bombini Buzz, Café Vic, Cento, Members Dining Room as well as great spaces where we cater for conferences, meetings and events.

The Role You Play

• Culinary creativity and menu planning
• Assist in leading and developing the culinary team
• Ability to follow standard recipes
• Consistently deliver high quality food within tight timeframes
• Effectively monitor food quality, food safety and standards
• Manage cost of goods through purchases and minimise stock waste

To be successful in this role you will possess:

• A la carte and function service experience
• Full working rights in Australia
• Certificate III in Hospitality (Commercial Cookery)
• Flexibility to work a 7 day a week rotating roster including nights and weekends
• Ability to manage a small kitchen and work autonomously
• Knowledge and experience in menu design, costing and implementation
• Experience in managing labour costs and cost of goods
